Grilled zucchini makes a great side dish for summertime cookouts. It only takes a few minutes to prep and cook. So, if you have the grill on already make some delicious zucchini.
Zucchini is typically available year round but it’s especially popular in the summer when it’s plentiful and affordable. If you find yourself with some extras, use them to make these, crispy on the outside and tender on the inside, fried zucchini.

Ingredients
- 2 Large Zucchini, cut lengthwise into slices between ¼ - ½ inch thick (about 8 slices)
- 1-2 tablespoons Olive Oil
- 1 teaspoon Salt
- ¼ teaspoon Garlic Powder
- ¼ teaspoon Dried Rosemary
- ¼ teaspoon Dried Oregano
- ¼ teaspoon Dried Thyme
- ¼ teaspoon Dried Basil
- ¼ teaspoon Black Pepper
- 1 tablespoon Chopped Parsley, for garnish – optional
- 1 Lemon, cut into wedges for serving - optional
Prep Work
There’s not a lot of prep work required for this side dish. Just make an Italian-inspired seasoning mix then slice and season the zucchini, that’s it!
We’ll start with the seasoning mix
Add the salt, garlic powder, rosemary, oregano, thyme, basil and black pepper to a small bowl. Stir well until combined.
Prepare the zucchini for grilling
Wash the zucchini and pat dry. Cut off the ends. Slice it lengthwise into thick slices that are between a ¼ to a ½ inch. Don’t slice them too thin so that they hold up on the grill and you can flip it without tearing.
Arrange the slices on a large baking sheet or platter. If water droplets accumulated on the top, pat them dry with a paper towel. Use a pastry brush to lightly coat the zucchini slices with olive oil on both sides.
Sprinkle the slices with the seasoning mix on both sides.
Time to grill
We used a gas grill to make the zucchini and used grill spray to prevent sticking.
These are temperature ranges because all grills are different. You know your grill, so use the temperature and cooking time as a guide.
- Low 250-350 degrees
- Medium 350-450 degrees
- High 450-550 degrees
Preheat the grill to medium to medium-low heat - around 350°F. We want the grill hot enough to get some nice grill marks, but not too hot so the zucchini can cook through without burning.
Use tongs to place the zucchini slices on the grill in a single layer. Cover and cook for 3-4 minutes. Flip each slice and cook for another 3-4 minutes. Check the zucchini, if they’re cooked to your liking remove them from the grill onto a serving platter. If you want them a little softer then cook for an additional 1-2 minutes until they reach the desired tenderness.
Garnish the grilled zucchini with chopped parsley and serve with lemon wedges on the side, if desired.

Notes
