Loaded sweet potatoes are an easy way to get all the delicious flavors of a sweet potato casserole, without all the work and dishes.

Ingredients

Sweet Potatoes, Butter, Brown Sugar, Water, Ground Cinnamon, Pure Vanilla Extract, Miniature Marshmallows

Scrub the sweet potatoes thoroughly with a vegetable brush and pat dry. Prick them a few times on all sides with a fork or the tip of a sharp knife.

Cut a piece of foil about 18 inches long. Wrap each potato going around a couple of times and fold in the ends. Arrange them on a baking sheet

Bake them on 400°F for 50-60 min. Unwrap the sweet potato and leave it on the foil. Cut a slit on top then push in the sides, fluff with a fork.

Add 1-2 tablespoons of the caramel sauce. Top with about 2-3 tablespoons of marshmallows. Repeat with the remaining sweet potatoes.

Preheat the oven to low broil. Place the baking sheet in the oven for 30-45 seconds or until the marshmallows are toasted on top. Keep an eye on them because this will happen quickly.
