This chicken cabbage soup is loaded with wholesome ingredients and is quick and easy to make. It’s a light yet satisfying soup that’s perfect for lunch or a light dinner.
Ingredients: olive oil, onion, carrot, celery, garlic, Italian seasoning, salt, pepper, chicken broth, green cabbage, cooked chicken, red potatoes
Cook the onions, carrots and celery for 3-4 minutes until the onions are translucent, stir often.
Add the garlic, Italian seasoning, salt, and black pepper. Stir well and cook for 1 minute.
Add the chicken broth and stir, gently scraping bits off the bottom of the pot. Raise the heat and bring the broth to a boil.
Once boiling, lower the heat to medium-low, cover the pot and simmer for 10 minutes.
Add the potatoes, cabbage and cooked chicken. Cover and cook 10-15 minutes or until the potatoes and cabbage are tender.
Keep the soup at a simmer, raise or lower the heat as needed. Stir occasionally to make sure nothing is sticking to the bottom.
Taste the soup and add salt, if needed. Serve and enjoy.
