Simple Pork Butt Roast

INGREDIENTS

Add the garlic, oil, rosemary, thyme, parsley, 1 tbsp. of salt, and pepper to a small bowl. Stir well.

Place the pork butt in a large roasting pan or dish. Rub with the prepared garlic herb mixture. Refrigerate 1 hour.

Remove the pork from the fridge to let the chill out. Sprinkle with 1 tsp. salt. Move the oven rack to the bottom third of the oven and preheat to 425°F.

Roast the pork at 425°F for 30 minutes. Then drop the temp. to 300°F. Cook for 6-7 hours until the internal temperature is at least 180°F-190°F.

Check the top of the roast after 4-5 hours. If it is browned and caramelized to your liking place a piece of aluminum foil on top.

Transfer the roast to a rimmed platter or sheet pan. Take care when transferring because it will be very tender and may fall apart.

Use a spatula to loosen the bottom and sides. Then use two spatulas to lift and support. Garnish with fresh herbs, if desired. Serve and enjoy.
